Ingredients

  • 10 tomatillos, husked and rinsed

  • 2 garlic cloves

  • 1 serrano pepper (adjust for spice level)

  • 3 tablespoons fresh cilantro

  • 2 ripe avocados

  • 1 tablespoon olive oil

  • Juice of 1 lime

  • Salt and pepper to taste

Instructions

  1. Heat a skillet or griddle over medium heat and add the olive oil.

  2. Roast the tomatillos, serrano pepper, and garlic until lightly charred and softened — about 8–10 minutes, turning occasionally.

  3. Let cool slightly, then transfer to a blender or food processor.

  4. Add cilantro, avocado, lime juice, salt, and pepper. Blend until smooth and creamy.

  5. Taste and adjust seasoning — add a little more lime or salt if desired.

  6. Serve chilled or at room temperature.

Notes

  • For a thinner consistency, add a splash of water or extra lime juice.
